Veyo pool corndog recipe!

Veyo Pool Corndogs Recipe

Ingredients:
1 c. cornmeal
1/4 c. sugar
1 1/2 c. milk or buttermilk
3/4 Tbsp Oil
1 egg
1 3/4 c. flour
1 Tbsp. baking powder
pinch salt
squeeze of honey

Directions:
Heat a pot of oil to about 375 degrees.
Combine the dry ingredients in a bowl, adding the milk, oil and honey last. Add the milk just until you have the same consistency as a think pancake batter, the add oil and honey.
Pour the batter into a tall drinking glass.
Insert a stick (disposable skewers or chopsticks) into the hot dog, pat it dry, then roll into the batter.
Immediately place in the hot oil and turn as necessary to brown all sides. It will only take a few minutes to cook until the cornbread is deep golden brown. Remove and drain on paper towels.

Personal Notes:
If you have trouble getting your batter to stick, dip the battered dog into the hot oil for just a couple of seconds to set a thin layer of batter. Allow it to cool a bit then re-batter it. The second layer will stick much better.
You can also do mini corn-dog bites.



Here is another recipe that I found that claims to be the Veyo Pool's, but the main difference I can see is the amount of flour.


Homemade Corn Dogs
Makes 10 Corn Dogs
1 cup yellow cornmeal
1 cup all-purpose flour
1/4 cup sugar
1 Tablespoon baking powder
1/4 teaspoon salt
1 egg, beaten
1 1/2 cups buttermilk (regular milk works too)
1 Tablespoon vegetable oil
1 Tablespoon honey
1 (10 count) package Hot Dogs
10 wooden skewers or chopsticks
2 Quarts Vegetable Oil, for frying
Directions: In a medium or large pot, add the oil. Turn heat to medium and heat oil to 350 degrees F.
In a large bowl, add the cornmeal, flour, sugar, baking powder and salt. Stir together. Then add the beaten egg, buttermilk, oil and honey. Stir until combined. (Batter should be a little thicker than pancake batter)
Remove hot dogs from package. Wipe them all dry with a paper towel (this will help the batter stick to them better) Insert one skewer or wooden stick into each hot dog.
Pour the batter into a tall drinking glass. Holding by the skewer, take one hot dog and dunk it into the batter, coating all of the hot dog. Slowly remove from batter and let a little excess batter drip back into the cup. Immediately place it into the hot oil, while still holding the stick. Turn as necessary to brown all sides. Cook for 2-3 minutes, or until all sides are a deep golden brown. Remove from hot oil and place on paper towels to drain grease. Repeat with all hot dogs.

This is a Top Secret recipe version of Starbucks Lemon loaf.

Starbucks Lemon Loaf 

1 1/2 cup(s) FLOUR
1/2 teaspoon(s) BAKING SODA
1/2 teaspoon(s) BAKING POWDER
1/2 teaspoon(s) SALT
3 EGGS
1 cup(s) SUGAR
2 tablespoon(s) BUTTER; Softened.
1 teaspoon(s) VANILLA
1 teaspoon(s) LEMON EXTRACT
1/3 cup(s) LEMON JUICE
1/2 cup(s) OIL
LEMON ICING
1 cup(s) POWDERED SUGAR; Plus 1 Tablespoon.
2 tablespoon(s) WHOLE MILK; I Used 2%.
1/2 teaspoon(s) LEMON EXTRACT
Instructions
Combine flour, baking soda, baking powder and salt in a bowl.
Use a mixer to blend together the eggs, sugar, butter, vanilla, lemon extract and lemon juice in a medium bowl.
Pour wet ingredient into the dry ingredients and blend until smooth.
Add oil and mix well.


Pour batter into a well greased 9x5-inch loaf pan.
Bake at 350 degrees for 45 minutes or until a toothpick stuck into center of the cake comes out clean.
Make the lemon icing by combining all the icing ingredients in a small bowl with an electric mixer on low speed.
When the loaf is cool, remove it from pan and frost the top with the icing.
Let the icing set up before slicing.

Bisquick 7-up bisquits




Bisquick, sour cream, 7-up and butter!.... These are excellent!!!! So easy and soooo good! Recipe is hard to find so here it is: 

7 Up Biscuits

4 cups Bisquick
1 cup sour cream
1 cup 7-up
1/2 cup melted butter

Mix bisquick, sour cream and 7 up. Dough will be very soft - don't worry Knead and fold dough until coated with your baking mix. Pat dough out and cut biscuits using a round biscuit / cookie cutter. Melt butter in bottom of cookie sheet pan or 9x13 casserole dish. Place biscuits on top of melted butter and bake for 12-15 minutes or until brown at 425 degrees, 

Cowboy Cake



Mama T’s Cowboy Cake

1 ½ cup sugar 2 tsp baking soda
2 cups flour dash of salt
2 eggs (beaten) 1 can of crushed pineapple

Mix flour and sugar together. Add soda, salt, pineapple (juice to) and eggs. Mix well and pour into a well greased 9 x 13 pan. Bake at 350 for 30 minutes
Frosting (Make this while the cake is baking)
1 ½ cup sugar 1 ½ cups coconut
1 stick oleo (butter) 1 tsp vanilla
1 cup chopped pecans 1 small can of pet milk (not sweetened condensed)

Mix all ingredients except vanilla together in a sauce pan. Bring to a boil and boil for 6 minutes. Remove from heat and add vanilla. Pour over cake as soon as you take the cake from the oven.
Let cake cool completely before serving. Yummy!!

Indian Fry Bread

Ingredients:

4 cups of flour
1 tbs. baking powder
1 teaspoon salt
2 tbs. powdered milk
1 ½ cups warm water
1 cup shortening
Extra flour to flour your hands

Directions:

Put flour in bowl, add baking powder, salt and powdered milk. Mix.

Mix in warm water to form dough.

Cover hands in flour.

Knead dough by hand until soft but not sticky. Cover with a cloth and let stand for 15 minutes.

Shape dough into balls about 2 inches across then flatten by patting and stretching the dough.

Melt shortening about an inch deep in frying pan. When hot put dough in pan. Fry one side till golden brown, then turn and fry the other.

This is a wonderful bread that can be used as a dessert by topping with honey, powdered sugar, etc. or can be used for main dishes such as topping with taco ingredients for an "Indian Taco".


Dixie Clark's marshmallow popcorn.

DON'T try this. You will not be able to stop eating this:
Dixie actually uses microwavable kettle corn.


Marshmallow Caramel Popcorn

1/2 c. brown sugar 1/2 c. butter 9-10 marshmallows 12 c. popcorn.

Microwave brown sugar and butter for 2 minutes. Add marshmallows.

Microwave until melted, 1 1/2 to 2 minutes. Pour over popcorn.

Pineapple, cream cheese, pecans, and coconut

NO BAKE - Cream Cheese, Coconut, Snowball's Recipe

1 package (8 ounces) cream cheese, softened.
1 can (8 ounces) crushed pineapple, well drained.
1 cup chopped pecans
3 cups flaked coconut.

In a small bowl, beat cream cheese and pineapple until combined then fold in the pecans. Cover and refrigerate for 1 hour.

Take out of refrigerator and roll into 1-inch balls; then roll the balls in the coconut. Refrigerate for 4 hours or overnight.

Yield: about 2 dozen.

Avocado and eggs:



Deviled Avocado Eggs!
Mix 1 large avocado with 3 egg yolks, add 1 tsp. cilantro and 3 tsp lime juice, 1 tbsp red onion. Pinch of salt and pepper. top with a dash of chili or paprika.

Kamarie turned 4.

Kort wedged himself into this chair and let Kams sit on the chair and hauled her around on his back for her birthday present from him. (at least until I saw them and made him stop.)

The only thing that mattered was that Kamarie LOVED her cake!



At 9 pm, we had a "knock-and-runner" 

(haha we used to call it something different when were kids, 
but we won't ever admit to it on account of what happened to Paula Dean. LOL)

Someone make these Cookies and tell me if they're worth it.





I've seen the recipe for these in a few different places and all of them say the same thing: "If you want the taste of sugar cookies without having to go through the work and mess of rolling them out, then this is the perfect recipe for you!" I kind of thought they were exaggerating a little bit because let's be real - we roll out sugar cookies because it's fun and it's an adventure, not because it's a pain in the rear. Then I got making these and realized that all of those people were actually right. I was completely done in no time and I wasn't a slave to the kitchen, having to roll, cut, frost, and repeat. It was the perfect dessert! (I found this recipe at Cooking Classy)

Ingredients:

Cookies:

2-1/2 cups bread flour (or all-purpose flour is fine)
1/2 tsp. baking powder
1/2 tsp. salt
1/2 cup butter, softened
1 cup granulated sugar
1 egg
1-1/2 Tbsp. sour cream
1 tsp. vanilla extract


Frosting:

1/2 cup butter, softened
4 cups powdered sugar
1/4 cup half and half
1 tsp. vanilla
Pinch of salt
Several drops of food coloring (optional)


Directions:

COOKIES: Preheat oven to 375 degrees Fahrenheit and grease a 9x13 inch baking dish.
In a medium bowl, combine flour, baking powder, and salt. Set aside.
In a large bowl, cream together butter and sugar until light and fluffy, about 3 minutes. (The longer you beat it, the fluffier your cookies will be.)
Add egg and combine well.
Add sour cream and vanilla and mix until completely blended.
Slowly add the flour mixture and stir until well combined.
Gently press the batter into the greased baking dish and spread out with hands. (If you butter your hands, this will help with the stickiness.)
Bake 17-20 minutes, or until edges become lightly golden.
Set aside to cool completely.
FROSTING: In a medium bowl, cream together butter, powdered sugar, and half and half until light and fluffy.
Stir in vanilla and salt, combine well.
Add food coloring until desired color.
Frost your cooled cookie bars evenly.
Cut into squares and serve.


I have to warn you - these are kind of addicting. Like, scary addicting. But, they honestly might just be worth the few extra pounds. Enjoy

Not so busy this year.

Last year, I had 6 kids at 6 different schools: Elem, Int, Middle, High, College, Univ.

This year, I don't have one at the Int school, so now I only have 6 kids at 5 different schools.

My life is sloooooowing down. . . . . . .lol

FIVE and still ALIVE !!!

Yes, folks, you read that right !!!!!

I ran 5 miles straight on the treadmill today, and I am still alive to talk about it.

No stopping, walking, etc.

Started off wondering if I could go a whole mile. Felt like crap. Felt tired. Felt fat and heavy (went camping this weekend.)

Today's totals and firsts are:

Burned 500 calories in 42..5 minutes.
Burned 800 calories in one session and in 68 minutes.

Ran 5 miles.
Ran for 65 minutes.
Burned 139 carbs in one session.

HOLLA !

PS  Is anyone else out there thinking Halloween thoughts yet besides me?

Awe, this swimg got broke. . . .





I lost it !

I FINALLY lost it !

The 7 STINKIN' lbs. I gained in 2 weeks when I started running............8 weeks ago. Yeah!

I finally lost THOSE stupid lbs.

Seriously! If you are wanting to lose some baby fat, you MUST do it before you turn 42.
I am here to tell you that "metabolism" is NOT your friend after 42 ! ! ! ! ! !
(and it sure isn't when you have your last baby at age 42..9)



This weeks run down.

Mon. Ran 5k. Really it was 3..25, but I couldn't do it faster than my best, but made it through.

Wed. Ran 5k in my new fastest time of 39:10. Felt like puking at the end. Stopped to walk a lap before I ran 1/2 more mile. Burned 500 calories in 42 minutes.

Thursday's workout provided me with a "Deja Vu Nausea". I only get those when I am working out these days. My temporary memory loss included not being able to remember what Hubby looks like and not being able to remember what it feels like to be married. These are just some of the random thoughts that go through my head after a deja vu incident. (Remember, when I have a deja vu, it is ALWAYS followed by 20 seconds of nausea, then usually memory loss. It is supposedly a form of a mini mall seizure?) I had a deja vu last week as well.


Fri. Ran 5k after only getting 5..5 hours of sleep. I would not normally do that.
I would always use that as an excuse to not to. HA!
But, I did use that as an excuse to not push myself however.
I did burn 500 cals. in 42 minutes and 600 cals in 53 minutes.
Actually ran 3..25 then walked .25 then ran .5

Why does it sound better for me to say I ran 5k instead of me saying I ran 3..25?

So, a first for me this week is that I ran 3   5k's in one week.
I never thought I would hear myself say that in my lifetime.
