Kams' gems:

The music came on at the end of the dragon movie, and Kams turned around and announced that "the music makes my feet bounce!"

She has always responded to music since she was an infant. Music would come on and she would start wiggling her head back and forth to the sound. She had no idea what she was doing, but she had no control over it. LOL

onion rings i gotta try

Restaurant Style Onion Rings
 
These are SO easy to make and taste like they come straight from a restaurant!
Ingredients
  • 1 large onion, cut into ¼ inch slices
  • 1¼ cups flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 egg
  • 1 cup milk
  • ¾ cup panko bread crumbs
  • 1 quart oil for frying
  • salt for seasoning
Instructions
  1. Heat oil to 350 degrees F.
  2. Separate the ¼ inch slices of onion into separate rings.
  3. In a small bowl, combine flour, baking powder and salt. Coat onion rings in the dry mixture completely and set aside.
  4. In a medium bowl, combine egg and milk and whisk until completely combined.
  5. Dip the flour-coated onion rings into egg-milk mixture and place on a wire rack to let excess egg-milk mixture drain.
  6. While onion rings drain, pour Panko bread crumbs into a shallow dish. Dip egg-milk coated onion rings into Panko bread crumbs until completely coated. Spoon crumbs over the top to cover as necessary.
  7. Place in hot oil and cook 1 to 1½ minutes on each side until it reaches a nice golden brown color. Flip them over to cook the other side.
  8. Place on a paper towel to let any excess oil drain off. Sprinkle each onion ring with a little salt.

Stupid Cake

We call this "Stupid Cake" at our house, because we can't stop eating that stupid cake.


INGREDIENTS
  • 1½ cup sugar
  • 1 cup sour cream
  • ½ cup butter, softened
  • 2 eggs
  • 3-4 ripe bananas
  • 2 teaspoons vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
Brown Butter Frosting
  • ½ cup butter
  • 4 cups powdered sugar
  • 1½ teaspoons vanilla
  • 3 Tablespoon milk, more if needed to reach desired consistency
INSTRUCTIONS
  1. Heat oven to 375 degrees F.
  2. Grease and flour 15 by 10 inch jelly roll pan.
  3. In a large bowl, beat togehter sugar, sour cream, butter and eggs until creamy. Blend in bananas and vanilla. Add flour, baking soda, salt and mix until well combined. Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown.
Frosting
  1. Make while cake is baking. Heat butter in large saucepan over medium heat until boiling. Let the butter turn a delicagte brown and remove from heat immediately. Add powder sugar, vanilla,and milk. Whisk togehter until smooth, (it should be thicker than a glaze but thinner than frosting.) Using spatula, spread the frosting over the warm bars.
